Let Get Cooking 

Yes it's December, Yes it's the holiday season,
Yes I will be baking cookies and cakes, and candy. 
But for now because of all the sweet treats I will be eating this holiday season I have learned how to make my own healthy chips. 
In order to not feel like I'm completely out of control, I have also made a self rule of not eating cookies everyday. YES it's true. 
So hopefully instead of gaining 10 pounds this season, it's only 5 bls. 


Start with 100% whole wheat tortillas shells, pita bread works well too. 

I used a pizza cutter to cut them into triangles.
I broiled them for about 3 - 4 minutes, then turned them over for another 2 min.
You just have to watch your own time, mine was different then the recipe. 

Let them cool on a cookie rack

Place them in a air tight container. 

Enjoy a healthy snack in between all the holiday parties.

Good Morning Everyone.
I sure hope you are enjoying the holiday season. 
We are pushing hard to finish up the remodel in the kitchen and dining room. But, sadly to say not everything will be done before Christmas. 
Each day we move a little further to being done. 
This week the buffet showed up and some of the artwork too. 
So, with 13 mind blowing steps and four hours later we have a beautiful buffet for the dining room that will hold our china. 
The walls have been stripped of wallpaper, painted and furniture moved back in. 
We have decided since we live near a small marina we would go with a "Lake Theme" for the house. 
Here is the progress so far. 

Done painting and moved all the furniture back into the dining room.

Let's Get Cooking
This morning I made Scones. 
The season is just calling for baking and certain flavors come to mind in the Fall. 

I made cranberry orange scones with a mix from Great Value. 
Just add 5 TBS of butter , 4TBS of milk 

roll out to a 6 inch and cut into 8th

Enjoy
 I have never made scones before and with a mix it was so easy. 
I added the orange flavoring to the mix, and I have to say my house smells wonderful. 
It make a quick and festival breakfast.

Two Minutes in Nature 
I'm always up for a drive and walk in nature

I just got back from a visit with my son Matthew. 
He lives in Idaho and as we were driving I looked out the window of the car and thought, "Look at the colors of Fall here. They are so vivid and beautiful." 
I'm working hard to live in the present moment of my life and not get to carried away with making future plans when I'm in a real life adventure I have already planned. 
So, on this wonderful drive, there is nothing like seeing farm land in Fall.

Living in the moment after we parked the car on this drive we came across a 
"Geocache" 
WHAT A SURPRISE!!1



So What is a Geocache? 
It's a treasure hunt around the world. 
Here is a YouTube that explains what it is and how to sign up. 


After opening our geocache and discovering its treasures we too put a little treasure inside and folded it up and replaced it for someone else to find.

Part of my creative life journey is cooking in the kitchen. 
Last Christmas Kerry gave me a cookbook, 
The Soup Bible, 
more than 100 recipes for delicious and satisfying soups. 

Now that Fall is here I think it's time to crack the spine and see what's cooking in this book. 
Hearty beefy beer soup





1 tablespoon vegetable oil
3/4 pound round steak, cut into 1/2 inch cubes
1 large onion, chopped
2 medium carrots, sliced
2 stalks celery, diced
5 cups beef broth
1 bottle 12 ounces stout or dark ale 
3/4 teaspoon dried oregano
1/4 teaspoon salt 
1/8 teaspoon black pepper
1 can kidney beans, rinsed and drained
1 small zucchini, cut into 1/2 inch cubes
4 ounces mushrooms, sliced 

1. Heat oil in Dutch over or large saucepan over medium heat, add beef, onion, carrots and celery. Cook and stir until meat is no longer pink and carrots and celery are crisp tender. 
2. Stir in broth, stout, oregano, salt and pepper, bring to a boil over high heat. Reduce heat to low, simmer 45 minutes or until beef is fork tender. 
3. stir beans, zucchini and mushrooms into soup. bring to a boil over high heat. Reduce heat to low, simmer 5 minutes or until zucchini is tender. 
makes 6 servings

Dinner the second night was the hearty beef beer soup and a caramelized onion and mushroom with paperjack grill cheese sandwich. 

This soup was amazing, we just couldn't get enough!!
Winner, winner for cold winter nights for sure. 
And the grill cheese sandwich, out of this world. 
5 stars and no left overs.

 you will be surprised by all the interesting things that will bubble up!

You have made it to the B week

B is for ~  Beyond

This week we are going to go beyond our imaginations. 
Just like our many names described who we are,
 our stories shape where we are connected. 
As time goes by, we enter into different chapters of our lives,
 people come and go, family expands or decreases, 
and we are older and wiser.  
Your story, past, present, and future. 

This week you will need:
1. Your lined Journal
2. Paints, markers, pens, etc...
if you wish to express yourself in that way.
3. Bubbles
This weeks assignment:

Writing your truth

1.  Write your story past and present in the first three (3) pages. 
2. The next pages are for the life you would like to live Beyond this point.
a. What would you like to be doing?
b. Where would you like to be?
c. Why do you want this for yourself?
d. When do you see this happening? 

In my experience with writing this way, 
I found that even if I went a little beyond the real possibility of this happening, there still was some truth to it.

Activity
It's play time, time to go beyond your imaginations. 
1. Think of three intentions that will help you make this future life story possible. I always like to start these intentions with the words "I will..."
2.  You will need a bottle of bubbles for this.
Say your intentions out loud before blowing a bubble, 
or blow your intentions silently into the bubble.
Watch it float up into the sky,
and once the bubble has burst 
your intention has been released  
into the universe.
3. Do this again and again until the bottle of bubbles are gone.

June's Aspects

This month of June received its name from the Goddess Juno, protector of women and marriage. This is where the custom of June brides originates. This month has many flower festivals, rose parades, weddings, and dances. Midsummer Night is a major international holiday for lovers, for divining the future, for building bonfires, and for jumping them for good luck.
Full moon aspect: Mead moon, strong sun moon
Universal event: The sun is moving away from the earth, but the constant moon prevails. The summer is peaking out, all ripens and gets ready for the harvest.
Communal event: Midsummer Night and Day. This is usually a three day festival featuring dancing in the woods, with religious ecstasy. This is a time to gather all the tribes together, travel home to the old homestead, visit family and kin. All restrictions of chastity were lifted at the time, marriage proposals and weddings are lucky now.
Message: to bond, to lead, to rule
Activity: Endurance and triumphant fulfillment
Emotional mode: Bonding, loyalty
Healing properties: To make Strong, to cleanse, prevention and protection
Color: Purple, indigo
Tree: Oak and mistletoe, symbols of the male principle. This is the time for ritually cutting mistletoe and catch it in a white cloth so that it never touches the ground
Flower: Rose
Creature: Wren
Gem: Pearl, moonstone, alexandrite

This is a little extra activity I have added to this course. 
As part of my  journaling I find writing my intentions on the full moon a fun activity. 
Because you will be burning your writings.  I feel it truly allows for you to be as open and honest about your intentions as possible. 
No one else is to read these writings, so....write from your heart without fear. 


On the full moons I like to sit quietly and write out my intentions for the future. Planting the seeds of love, prosperity, good health and so on.
This year Kerry joined me in a Moon Meditation and afterward with made a fire and burned our intentions for the Universe to read.
We will not have another Friday the 13th Full Moon until 2049. I will be 93 years old, I'm not sure I will see this again. I'm so happy I got to share this with Kerry.
